Claire’s Slice…
Not long after Mum died, I was mucking around in the kitchen and I contrived (for want of a better word) a chocolate slice. My husband and I liked it and so I named it after Mum because kitchens and cooking were one of her favourite things…
This is the recipe for Claire’s Slice:
(PS – I used English measurements)
5 good ozs of butter and a heaped tablespoon of golden syrup, melted, and a bit more butter if you think the mix will be dry
One and a half cups self raising flour
2 dessertspoons cocoa
2 dessertspoons coconut
To this, I added a half a packet of mixed peel (Australian lemon and orange) – approx 4.4 ounces
And the rind of half an orange and the juice of half an orange (big Australian oranges)
All mixed together.
Then add about 5 oz of dark chocbits.
Press into a slab tin and bake for 15 minutes at 180 degrees, fan-forced.
Allow to cool and then ice with chocolate icing. I always make my icing with butter, warm water, cocoa and fine icing sugar and I add a bit of each until the mixture is the consistency and quantity I wish for. It’s exactly the way my Mum used to make icing.
Cut into squares and keep in sealed container in the fridge.
It’s a bit like eating a jaffa…
